    Reading Dough

    Intermediate

Learn to see, feel, and interpret what your dough is telling you.

    Overview

Your dough is talking to you. Most bakers just aren't listening yet. Reading dough means using your eyes and hands instead of a timer. Is the surface smooth or tacky? Is it jiggly or tight? Does it stretch or tear? These signals tell you more than any recipe ever could. During bulk fermentation, you're watching for volume increase, dome shape, and how the dough moves when you tilt the bowl. During shaping, you're feeling for tension and elasticity. After proofing, you're pressing gently and watching how it responds. None of this requires fancy tools. It requires attention. Once you start reading dough, you stop being a recipe follower and start being a baker. You'll know when to fold, when to shape, and when to bake — not because someone told you, but because the dough showed you. This page teaches you what to look for at every stage.
